Homemade Spinach and Quinoa Burger on Whole Wheat Ezekiel Bread with White Balsamic Cucumbers – Day 17

I was determined to try something different … and fell in love with these :).  You can season these with whatever you want – I opted to keep them pretty plain the first time I made them.

This recipe will make 4 Burgers

(Obviously, you can double or triple ingredients if you’re making it for your family or friends)

Calories: About 400 (per serving 1 burger / 1 pc of bread / 3/4 of a cucumber)

Ingredients Needed:

  • 1-2 cups Quinoa (I used Earthly Choice for this recipe: http://www.earthlychoice.com/quinoa.html)
  • 10oz. frozen Spinach
  • 2-3 cucumbers Sliced
  • 1 tbsp Quinoa Flakes : used as a thickener – ( I use http://www.quinoa.net/145/154.html )
  • 4 pieces Whole Wheat Ezekiel Bread
  • 2 egg whites
  • Garlic Powder
  • Onion Powder
  • Red Pepper Flakes
  • Ground Pepper

Directions:

  • Preheat Oven to 300 degrees
  • Defrost Spinach and Dry
  • Heat water and Cook Quinoa (about 10-15 min)
  • Combine quinoa, spinach, egg whites, quinoa flakes
  • Mix Ingredients together
  • Season (I used a little bit of garlic powder, onion powder, a few red pepper flakes and ground pepper)
  • Spray a baking sheet with some olive oil spray
  • Make the Spinach / Quinoa Mix into 4 Patties
  • Bake in the Oven for 15 – 20 minutes (keep checking so they don’t completely dry out or burn)
  • Slice Cucumbers
  • Drizzle with White Balsamic Vinaigrette
  • Toast Whole Wheat Ezekiel Bread
  • Put burgers on top of one piece of ezekiel bread and have cucumbers on the side
  • Serve and Enjoy 🙂 !
